Happy Birthday, US of A! Ciabatta Bites

10:31 pm by

What are you doing for 4 July? We’re having ribs with friends, then fireworks. Happy birthday, US of A!

(BTW, this is a very patriotic and internationally happy appetizer: red tomatoes, white Havarti cheese, bleu cheese olives, peppered dry salami on ciabatta bread. Has been tested for quality control by @Michael Diehl & passed with (heh) flying colors.)

Ciabatta Bites

  • Ciabatta loaf (Trader Joe’s)
  • Garlic or Bleu Cheese stuffed olives (Trader Joe’s)
  • Fresh basil leaves (Trader Joe’s)
  • Dry Italian salami (Trader Joe’s)
  • Cherry tomatoes (Costco)
  • Havarti cheese (Costco)

Slice Ciabatta bread in half, then cut each half into thin slices. It’s OK to “compress” these slices, because Ciabatta is notoriously hard to cut thin, but the pieces fluff right back out. I got 16 thin slices out of this loaf, after the six or so used for “quality control.” gotta make sure it tastes good…

Slice olives and cherry tomatoes in half. Slice 4 or salami slices in half. Put together two squares of Havarti cheese and slice in half, then in half again, then again, until have a tidy little pile of cheese triangles.

On each slice of bread, place one sliced piece each (in order): salami, cheese, basil. Top with one half each of cut tomato and olive.

Since we have picky kids, I halved this, so 8 pieces have salami and the other 8 do not.

Serve with light extra-virgin olive oil for dipping, if desired – but it probably won’t be used. This appetizer rocks on its own.

Enjoy, and happy Independence Day! Hope you don’t stay up too late watching fireworks. Oh, wait – we have tomorrow off! Stay up late & enjoy!
