Kids Cook: Cottage Cheese Protein Pancakes

Cottage cheese pancakes are a huge favorite in our house. As in, “don’t count on leftovers.” And J, being a good 10 and a half, was in need of cooking lessons. What better way to start than Protein Pancakes?

This recipe started from a cutout in The Oregonian’s FoodDay (every Wednesday), with some modifications (of course).

Cottage Cheese Protein Pancakes

Ingredients

  • 1 c cottage cheese
  • 1/2 c all-purpose flour
  • 6 eggs
  • 1/4 c whole wheat flour
  • 1/4 tsp kosher salt
  • 1/4 tsp baking powder
  • 1/2 c milk
  • 2 T canola oil or 4 T applesauce
  • 1 tsp vanilla

Combine cottage cheese and all-purpose flour in blender. Mix until smooth, then add remaining ingredients and mix for 30 seconds. Batter should be smooth but don’t overmix!

Spread in 1/4 cupfuls onto hot griddle. Flip when edges are dry.

This batter is great for making designs – we usually make a J and an M for each boy.

For “special pancakes,” top with a circle of whipped cream and a cherry. This is our go-to breakfast for birthdays. Just ask King J!
